Einkorn is the ancestor of all our wheat. Triticum monococcum, or einkorn, is a wild grass originating from the Near East. Einkorn bread is distinguished by its low gluten content and is generally well tolerated by people sensitive to common wheat proteins.
Our organic stone-ground white einkorn flour corresponds to a T80 with an ochre yellow color. It is a high-quality organic product, obtained through stone grinding, which gives it a unique flavor and texture.
This flour is ideal for making bread in bannetons or molds. It produces tasty and digestible products with sweet and spicy aromas.
