Theme : Clean label Concept formulated from : ▪ New Cargill LMC+ 308 pectin > texturising low Brix jam. This pectin is suitable for organic and cleaner label products compared with starchy pectins. It performs very well in low-sugar recipes and produces textures similar to those of starchy pectins, even without the addition of calcium. As an alternative to conventional LM pectins, it reduces the cost of use thanks to its higher gel strength, even without the addition of calcium. This pectin is also perfectly suited to making fillings and toppings.
