InnoSense is Limagrain Ingredients' brand of functional flours. Functional flours have been created in particular to combine consumers' expectations of naturalness with industrialists' requirements in terms of product and process consistency. Indeed, 3/4 of consumers say that it is important for food and beverages to be 100% natural*. InnoSense functional flours are the fruit of the synergy between Limagrain Ingredients' cereal expertise and its mastery of hydro-thermal processes. For over 30 years, InnoSense 100% Clean Label functional flours have been meeting the major challenges of the agri-food industry: optimising texture, replacing starch, improving hydration, costs saving, improving nutrition and processes, and all this with a simple "flour" declaration. For example: a major challenge for the bakery industry, and for sandwich loaves in particular, is to ensure that they are very soft yet resilient enough to withstand damage to their shape during transport or on the shelf. Using InnoSense Wheat 1500i at 5% in a classic recipe improves the structure of the bread and the texture of the crumb. It makes the bread easier to handle during slicing and reduces damage during delivery to the shop. And it's totally transparent in the labelling, since InnoSense Wheat 1500i declares itself to be "wheat flour"! Similarly, for the sauces and ready meals' industry, the clean label approach via the substitution of modified starches is an important issue. Modified starches are used for their added texture but are not generally Clean Label or natural. Using InnoSense viscoplus at 6% in a classic recipe for béchamel sauce, for example, could completely replace the modified starch while providing a smooth, creamy texture and an authentic 'homemade' taste. InnoSense viscoplus is also resistant to shearing, pasteurisation and freezing/thawing, with no syneresis effect.
